Hibiscus and Pineapple Batch Mocktails

Ingredients:
- 2 cups water 
- 4 hibiscus tea bags 
- 5 cups coconut water 
- 4 cups Libby’s canned crush pineapple 
- 1’’ piece fresh ginger, peeled and roughly chopped 
- Ice cubes, to serve 
- 2 cups sparkling water 
Directions:
- Bring water to a boil, then add tea bags. Allow to steep about 10-20 minutes, until slightly cooled. Remove and discard tea bags, then place tea in a blender. 
- Add coconut water, pineapple and ginger to the blender. Blend until smooth. 
- Serve mocktails over ice, and top with sparkling water. Refrigerate leftovers.
